Ayam Berempah
The signature. Overnight 16-spice marinade, fried golden, buried in crunch.
Marinated with aromatics and spices, cooked until beautifully crisp and served alongside fragrant coconut rice, sambal, achar and all the good stuff.
Turmeric, cumin, coriander and thirteen friends, blended fresh and massaged into every cut. Overnight marinade — no shortcuts.
Fried garlic, breadcrumbs, kerisik and sakura ebi. A typhoon-shelter-style shower that makes every bite go off.
Softly fragrant and fluffy — the quiet foundation, built to soak up sambal.
Tangy-fiery sambal with housemade achar — acid and crunch to balance all that spice and fry.

Straight talk: trays are fried to order, so lead time and availability are confirmed by phone or DM before anything is locked in. Smaller group makan? The real Berempah Bros Feast For 2 platter (S$25.80 — two proteins, begedil, otah, mushroom berempah, rice, sambal, achar & crunch) is live on Oddle right now.
"Berempah" is Malay for "spiced". Traditional ayam goreng berempah is fried chicken marinated in a rempah — a fresh-ground spice paste. Ours uses sixteen spices, rests overnight, and gets finished with a crunch topping you won't find at any other stall.
We're not halal-certified — the Berempah Bros menu includes a pork dish, and proteins share the same fryers. Sister stall Gepuk Guys (Bedok) uses no pork and no lard, though it isn't certified either. We get asked this a lot and we'd rather be upfront about it.
Derek Cheong (@the.rek) — an engineering undergrad who became MasterChef Singapore's youngest champion at 23 (Season 2, 2021). He took the trophy into hawker centres on purpose, building Berempah Bros and sister brand Gepuk Guys into six stalls across the island.
Yes — islandwide via Oddle, and foodpanda from selected outlets. Or drop by any of our six stalls; food is always freshest straight from the fryer.
Thigh if you want it juicy, breast if you like it lean — those are the two cuts on the menu. There is no wrong answer — the 16-spice rempah does the heavy lifting either way.
